After making black-eyed peas for New Year’s Eve, I looked up a lot of recipes for BEPs from the Middle East. The Egyptian version is made with stewed beef and tomato sauce. Like many Middle Eastern recipes it’s unhelpfully called loubiya, which just means “beans”.

I took this vegan recipe and ruined it by adding back in the stew cubes and stock. Sorry not sorry, it came out great.
